Lesson learned – in Austin you are not able to buy alcohol before noon, and since I was there at 10:30 in an effort to beat the weekend crowd, I was unable to purchase the white wine the recipe calls for. But, we carried on.
Since not everyone in the house likes asparagus I added mushrooms as well. Also, texture is a big deal around here so I pan fried, in olive oil, the mushrooms so they too were al dente, like the risotto, and then did the same for the asparagus once the mushrooms were done.
I also doubled the recipe since there were two of us but we still had a little bit of leftovers, perfect for lunch the next day.
